Vegan Baked Berries & Oats.
So... it's been a hot minute since I've posted on here. But I'm back, and I brought you food!
Meatless Monday seems to be a thing. As a pescatarian (meaning I abstain from eating meat, with the exception of fish) my Mondays already are meatless. But after watching the documentary Vegucated I decided I'd make up my own 'Vegan Mondays' and give it a try. Today was my first go at it, and I started it off with some baked oatmeal and berries. I drew inspiration by reading these similar recipes at Sweet Roots blog and over at a blog called So, How's It Taste?.
I made some modifications, both out of personal preference and based upon what I had on hand.
So here is my recipe below. Let me know what you think!
Ingredients:
2 cups rolled oats
1/4 cup chopped almonds
2 Tablespoons chia seeds
1 teaspoon baking powder
1 teaspoon cinnamon
1/3 cup maple syrup
1 Tablespoon vanilla extract
1 cup unsweetened almond milk
2 cups of mixed berries (frozen is okay, but fresh is better)
Directions:
1. Pre-heat oven to 375 degrees.
2. Lightly grease an 8x8 pan. I used cocoanut oil for this, but anything works.
3. Combine oats, almonds, chia seeds, baking powder, cinnamon, maple syrup, and vanilla in a large bowl.
4. Line the pan with half the berries, then pour the oat mixture on top.
5. Pour the almond milk over the oats and berries, then put the remainder of the berries at the top.
6. Place on the center rack of the over for 40 mins.
7. Let cool for 15 minutes, then serve and enjoy.
Super yummy served cold as well.

Friday Favorites.
I can't believe it's already Friday. Last week at this time I was rushing around trying to pack for Oregon. It feels like that was only a couple of days ago. Well here it is- a roundup of my five favorite things from around the web this week.
I am beyond in love with this art print from Leilani Joy Art. Since I can't yet afford to buy original art at this point in my life, I've been looking around for prints I'd like to decorate my home with. This one is pretty high on the list.

Obviously I've been thinking about decorating, even though I've been away from home. These clay leaf bowls will be the perfect project for when I get back. The how-to can be found here, on Urban Comfort.
You may or may not be aware that Mercury went into retrograde yesterday, on 2/6. If things have started to seem a bit wonky, and communication is going a muck, this would explain why. Luckily Gala Darling has put together a list of 10 magical ways to make the most of mercury retrograde, proving that it isn't something to be feared!
With so many milks on the market today, it can be hard to decide which on is the best for you. (Think about it- dairy, coconut, almond, soy, hemp, etc!) This article over at the Free People blog does a great job of breaking down the pros and cons of each, so you can make the right choice based on your own personal needs.

The Female Reincarnation of George Harrison

Blogging to you from Ashland, Oregon! I am down here for a couple of weeks, and absolutely love the rogue valley. I've been here many times throughout my life, and it never gets old. The pace down here is relaxing, and the air is refreshing.
I have long had an obsession with The Beatles, and, aside from reading what it's like to be married to the man (Wonderful Tonight: George Harrison, Eric Clapton, and Meby Patti Boyd), a long time crush on Mr. George Harrison. But George was a bit before my time, so I decided to be the reincarnation of a legendary man was the next best thing. Not that I plan on this being a full time persona. But it was fun for the day.

For whatever reason my head is incredibly dizzy today, creating unbelievable writers block. You can see I keep using this bundle of daisies to accessorize. One might say I'm addicted. Maybe thats why my head is spinning- I'm having daisy withdrawals.
