Vegan Baked Berries & Oats.



 So... it's been a hot minute since I've posted on here. But I'm back, and I brought you food!

Meatless Monday seems to be a thing. As a pescatarian (meaning I abstain from eating meat, with the exception of fish) my Mondays already are meatless. But after watching the documentary Vegucated I decided I'd make up my own 'Vegan Mondays' and give it a try. Today was my first go at it, and I started it off with some baked oatmeal and berries. I drew inspiration by reading these similar recipes at Sweet Roots blog and over at a blog called So, How's It Taste?.

I made some modifications, both out of personal preference and based upon what I had on hand.

So here is my recipe below. Let me know what you think!

Ingredients:
 2 cups rolled oats
1/4 cup chopped almonds
2 Tablespoons chia seeds
1 teaspoon baking powder
1 teaspoon cinnamon
1/3 cup maple syrup
1 Tablespoon vanilla extract
1 cup unsweetened almond milk
2 cups of mixed berries (frozen is okay, but fresh is better)


Directions:
1. Pre-heat oven to 375 degrees.
2. Lightly grease an 8x8 pan. I used cocoanut oil for this, but anything works.
3. Combine oats, almonds, chia seeds, baking powder, cinnamon, maple syrup, and vanilla in a large bowl.
4. Line the pan with half the berries, then pour the oat mixture on top.
5. Pour the almond milk over the oats and berries, then put the remainder of the berries at the top.
6. Place on the center rack of the over for 40 mins.
7. Let cool for 15 minutes, then serve and enjoy.

Super yummy served cold as well.

Back in Washington state. This coat describes the pacific northwest perfectly, while keeping me warm and cozy in this chilly, rainy weather. Needing a little something to boost my spirits with during this endless seeming haze of gray. Choosing to lose myself in yoga and art.

Friday Favorites.

I can't believe it's already Friday. Last week at this time I was rushing around trying to pack for Oregon. It feels like that was only a couple of days ago. Well here it is- a roundup of my five favorite things from around the web this week.




I am beyond in love with this art print from Leilani Joy Art. Since I can't yet afford to buy original art at this point in my life, I've been looking around for prints I'd like to decorate my home with. This one is pretty high on the list.

You may or may not be aware that Mercury went into retrograde yesterday, on 2/6. If things have started to seem a bit wonky, and communication is going a muck, this would explain why. Luckily Gala Darling has put together a list of 10 magical ways to make the most of mercury retrograde, proving that it isn't something to be feared!



With so many milks on the market today, it can be hard to decide which on is the best for you. (Think about it- dairy, coconut, almond, soy, hemp, etc!) This article over at the Free People blog does a great job of breaking down the pros and cons of each, so you can make the right choice based on your own personal needs.

The Female Reincarnation of George Harrison

Blogging to you from Ashland, Oregon! I am down here for a couple of weeks, and absolutely love the rogue valley. I've been here many times throughout my life, and it never gets old. The pace down here is relaxing, and the air is refreshing.

I have long had an obsession with The Beatles, and, aside from reading what it's like to be married to the man (Wonderful Tonight: George Harrison, Eric Clapton, and Meby Patti Boyd), a long time crush on Mr. George Harrison. But George was a bit before my time, so I decided to be the reincarnation of a legendary man was the next best thing. Not that I plan on this being a full time persona. But it was fun for the day.

For whatever reason my head is incredibly dizzy today, creating unbelievable writers block. You can see I keep using this bundle of daisies to accessorize. One might say I'm addicted. Maybe thats why my head is spinning- I'm having daisy withdrawals.

Five Things I Love Fridays.

I've decided to jump on the bandwagon. Dedicating a post each Friday to share some of my favorite things for the week.



1. Ice Lips by We Love. I've been listening to them, and this track in particular, all week. This is an unofficial music video, but I dig how artsy it is.







2. Love these lace crowns by Bitter Betty. Can't wait to make a few and wear them about town. A very DIY meets Dolce & Gabbana vibe. Get the tutorial here.



3. This Quinoa Tabbouleh salad recipe from The Vedge look so good. I haven't tried it yet, but will be at some point this week. It's vegan and gluten free, making it a great option for serving at a party or potluck.




4. I'm a regular reader of Oracle Fox blog, and the photos in this post are just a few of the many reasons why.





5. And finally, Drake Weather. Because why not have a side profile of Drakes face with my local weather behind it?

Goldie

Lately I've been embracing my crazy curly hair. Not only do I feel it looks rad, but its so easy to do! I literally hop out of the shower, keep a towel over my hair turban style while I get ready for the day (eat, makeup, get dressed, etc.), then tousle my hair with my fingers to make it bigger. No room for uniformity in these curls! I try to avoid brushes and combs when going with this look, as they tend to turn my curls into a big floof, and I'm not tryin' to look all fluffy. Ya feel me?

It only feels natural to wear colors or bold prints when my hair is all in your face like this. I absolutely love this astrology chart tie dye number from urban. I stuck the daisies in my laces as an afterthought, inspired by Marc Jacobs himself. I keep finding random uses for these flowers, and I think its fun to add an unexpected element to an outfit. Any thoughts?

Pretty Things and the Root Chakra

Purchased a few pretty things at Forever 21 the other day. I've been especially in love with the hoop earrings, pictured above. I also have a thing for lightweight and lacy lingerie. For a special someone, you may ask? Nope, just decided to treat myself.

 On another note, I've been focusing on a healthy body, mind, and soul for the past year and a half or so now. I find this to be such an important part of life and want to share information with my readers. I have known about the chakras for sometime, but have often felt that the information I was reading about them was not only hard to relate to but hard to retain. I found this article on the Free People blog written in an informative and easy to read way. I encourage you to check it out, & learn more about your root chakra.

Sassy.

It's kind of hard not to feel sassy when you've paired a pair of khaki overalls with heels and a faux fur vest. (Or how about "vegan fur". I think I like that better. :p) So the bright red beanie proclaiming the mood with large in-your-face lettering across the front seemed entirely necessary. So let your sassy flag fly. Or sassy beanie, that is.

Really inspired by the pattern mixing seen at the Spring 2014 Dries Van Noten show. I still have yet to try pattern mixing in my own outfits. It's something I'm always meaning to do, but never seem quite ballsy enough to make happen. However that will change soon. Going to be laying out my patterned clothing to create some looks for you to see soon.
